Recipe of the week - Ham and Cheese Breakfast Sticks

1 Tablespoon of Dijon or Honey Mustard

4 Slices of thin deli ham

2 slices of Swiss cheese

2 slices of whole wheat sandwich bread, crusts removed

Spread the mustard over the two pieces of bread.  Layer one piece of bread with cheese, ham and another slice of cheese.  Top with remaining bread.

Butter the outside of the sandwich.  In a skillet over medium heat, toast the sandwich for 4 minutes on each side or until bread is lightly toasted and cheese is melted. 

Cut sandwich lengthwise into thirds and serve.

These are pictures of 21 month old Blakely and 3 year old Brendan from Maumelle, AR.  Looks like these kiddos enjoyed their beach vacation this summer.  They both make beautiful beach babes!

Child drowning prevention

So summer is over and most pools are closing for the year and what a wonderful summer it has been! 

I received an email from my friend Jennifer in Little Rock, Arkansas that I wanted to share with everyone.  As a mom, this video was hard to watch but also very interesting at the same time.  It really made me think and say wow.

Recipe of the week - Your favorite ice cream pie

Need a quick and easy dessert?  Try this recipe!

*  Take a store bought 9-inch graham cracker pie crust and cook according to package directions

*  Let crust cool

*  Fill with your favorite ice cream (I use BlueBell Cookies and Cream)

*  Top with your favorite toppings (Fruit, whip cream, chocolate or caramel syrup, or nuts!)

Calling all creative kid chef’s! 

The maker of Jif brand peanut butter, J.M. Smucker Company, is calling for all entries in its sixth annual Jif Most Creative Peanut Butter Sandwich Contest.

The grand prize is a $25,000 scholarship fund, with each of the four runner-ups receiving a $2,500 scholarship fund!  Parents help your kid (ages 6 - 12) enter the nationwide contest.  Entries will be accepted through November 15th.

Last year’s winner?  Alexandra Yoder, 12 years old, of Fort Wayne, Indiana.  Her recipe - “Peanut Butter Rolls - Sushi Style”  The sushi consisted of creamy peanut butter, strawberry cream cheese and fruit rolled in a crepe, cut and served like sushi.  She used pretzel rods for chopsticks and chocolate yogurt for soy sauce.  Sounds yummy and how creative is that!!

Here are a few pictures of 19 month old Maddox from North Little Rock, AR.  Maddox is enjoying a day at the lake, nothing like a Capri Sun to cool you off on a hot summer day!  Maddox shows us that you can be safe on the lake by wearing your life jacket and still have a blast!  What a cool guy!
